Frankenstein Brownies

These Frankenstein brownies are my favorite Halloween bake this year. Fudgy espresso brownies get dipped in green chocolate, then topped with Supernatural Sprinkles chocolate sprinkle hair and googly eyeball sprinkles, and little piped stitches. They look like a bakery treat but come together with one pan, a fork, and a piping bag. My boys think they are the best thing I have ever made, and honestly they might be right.

Why You’ll Love This Recipe

  • Fudgy and rich. A spoonful of instant coffee deepens the chocolate without tasting like coffee.
  • Freezer trick for clean dipping. A quick 15 minute freeze keeps the brownies firm so the green shell goes on smooth.
  • Kid approved decorating. Hair, eyes, and stitches are the perfect job for little helpers.
  • Party ready. Nine big squares, easy to make a day ahead and keep chilled.
  • Totally customizable. Give every Frankenstein his own face.

Tips for making this recipe

  • Don’t skip the freeze. Cold brownies hold together in the warm chocolate and let the shell set fast.
  • Work in small batches. Keep a few brownies in the freezer while you dip the others so they stay firm.
  • Decorate right away. The sprinkles and eyes only stick while the green coating is still wet.
  • Snip small. Cut a tiny tip on your piping bag for thin, clean stitches. You can always go bigger.

How to store

  • Store Frankenstein brownies in an airtight container in a cool place for up to 4 days. I keep mine in the refrigerator so the eyeball sprinkles don’t absorb moisture from the chocolate and bleed. Let them sit out for 10 minutes before serving for the best fudgy texture.

FAQ’s

Can I make these ahead? Yes. Make them up to 2 days ahead and keep them chilled in an airtight container.

Why did my white chocolate get thick or clumpy? It likely overheated or got a drop of water in it. Melt slowly in short intervals, and use gel or oil based coloring.

Can I use a boxed brownie mix? Yes. Bake it in an 8 x 8 inch pan, then freeze, dip, and decorate the same way.

Do I need the coffee granules? They deepen the chocolate flavor, but you can leave them out.

What can I use instead of eyeball sprinkles? Large candy eyes work great, or pipe dots of white and dark chocolate.

9 Brownies

Ingredients

Brownies

  • 1 stick 1/2 cup salted butter, melted
  • 3/4 cup granulated sugar
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup all purpose flour
  • 1 tablespoon instant coffee granules
  • 1/3 cup semi sweet chocolate chips optional

Green Coating

  • 16 ounces white chocolate chopped
  • 1 tablespoon coconut oil
  • Green food coloring as needed

Decorating

  • 8 ounces dark chocolate chopped
  • 1 teaspoon coconut oil
  • Chocolate sprinkles for hair
  • Eyeball sprinkles or large candy eyes

Instructions

  • Prep. Preheat the oven to 350°F. Line an 8 x 8 inch baking dish with parchment paper.
  • Wet ingredients. In a large bowl, mix the melted butter, sugar, vanilla, and eggs until combined.
  • Dry ingredients. In a separate bowl, stir together the cocoa powder, flour, and instant coffee.
  • Combine. Add the dry ingredients to the wet and mix until just combined. Fold in the chocolate chips if using.
  • Bake. Spread the batter evenly in the pan and bake for 20 to 25 minutes. I find 20 minutes is perfect for fudgy brownies.
  • Cut and freeze. Let the brownies cool slightly, then cut into 9 squares. Freeze for 15 minutes.
  • Melt the coating. Melt the white chocolate with 1 tablespoon coconut oil in the microwave in 30 second intervals, stirring between each, or in a bowl set over a pot of simmering water. Stir in green food coloring until you get your Frankenstein shade.
  • Dip. Set a wire rack over a baking sheet. Dip each frozen brownie into the green chocolate, lift it out with a fork, tap off the excess, and set it on the rack.
  • Hair and eyes. While the coating is still wet, sprinkle chocolate sprinkles across the top for hair and press two eyeball sprinkles just below. Repeat with all the brownies.
  • Set. Freeze the decorated brownies for 10 minutes.
  • Pipe the details. Melt the dark chocolate with 1 teaspoon coconut oil, transfer to a piping bag, and pipe lips and stitches onto each face. Decorate as desired.
  • Serve. Let the chocolate set fully, then serve.

Notes

Bake time: Start checking at 20 minutes. Slightly underbaked brownies stay fudgy after freezing and dipping.
Food coloring: Gel or oil based coloring works best in chocolate. Some liquid colorings can make melted chocolate seize.
Storage: Keep in the fridge so the eyeball sprinkles don’t absorb moisture from the chocolate.
